I mean, they actually couldn't, Gengis Khan was known to not have a clue how to siege a city, in fact when he sieged down Beijing (I don't remember if it was that city or not) he had no idea what to do, so he tried to reditect a river to bring the wall down, he then got his own army flooded and had to go home.
Ironically, it was the chinese who taught them how to siege down a city when some of them defected to the mongols, just as Sun Tsu said "The chance to defeat your enemy is given by your enemy" (Or something like that).
