You can take a look at the health regeneration as a proxy but then that might also be from your healers rather than awakening. The final awakening is a bit easier to tell if you have max cloth as he would bounce damage for a short time
You can definitely swap Athena for Shion, and Saga Light could work but you need him to be at the back so that he doesnt disappear too quickly before Poseidon fully awakens, otherwise you risk too much attacks coming Poseidon all at once as your team will be 4 vs 5 for awhile. Generally speaking though I try to separate Poseidon and Saga Light as they dont have much synergy together, the team would work because they are both OP characters, but they are not really helping each other

Minimum 11* to unlock his constellation, but obviously the higher the better
