Easy Eggnog Bundt Cake with Eggnog Glaze

  • Full recipe below! Eggnog is one of those traditional Christmas flavours, and you can do more than just drink it! Why not try this flavourful bundt cake recipe to impress your guest this silly season.
    Take the pressure down a bit with a couple of box cake mixes and storebought eggnog. I used a 'Betty Crocker Super Moist Vanilla Cake Mix' and 'Pauls Original Eggnog', but feel free to use your own homemade eggnog.
    Decorate in any way that makes you happy!
    EASY EGGNOG BUNDT CAKE with EGGNOG GLACE
    preheat oven to 160C 230F
    to prepare pan - 2 - 3 tbsp unsalted butter - melted
    2 - 3 tbsp plain flour/ all purpose flour
    for cake batter
    2 boxed cake mixes
    2 tsp ground cinnamon
    2 tsp ground nutmeg
    1/2 tsp ground cardamom
    1/4 tsp ground nutmeg
    6 large eggs - lightly beaten
    160g unsalted butter - melted
    360ml eggnog - either homemade or store bought
    for eggnog glaze
    200 - 250g pure icing sugar - sifted to remove all lumps
    60g unsalted butter - melted
    40 - 80g eggnog
    edible decoration of choice - e.g. Christmas hundreds and thousands, edible shimmer/glitter
    Generously grease the bundt pan with butter and sprinkle well with plain flour to prevent the cake from sticking. Take your time!
    Into a large bowl add cake mixes and spices and mix well.
    Add the melted butter, lightly beaten eggs and eggnog.
    Mix using an electric mixer on LOW for 30 seconds, then on MEDIUM speed for 2 minutes, using a spatula to help combine any dry mix.
    Pour into the prepare bundt pan and bake for 50 - 60 minutes (until the cake slightly pulls away from the tin, an inserted wooden skewer comes out clean and the cake is slightly golden in colour)
    Remove from the oven and allow to cook in the bundt pan for 1 hour.
    Place a cooling rack over the base of the cake, invert to release the cake from the tin.
    Cool completely before adding the glaze or it will melt.
    Place onto serving plate before preparing the eggnog glaze.
    Make Eggnog Glaze
    Place sifted icing sugar into a medium sizes bowl and add the melted butter and about 40ml of the eggnog.
    Whisk together, adding more eggnog if needed to create the thickness of glaze/icing you wanted.
    Pour as much icing as you like over the cake and decorate to your hearts content.
    TIP
    Different brands of cake mixes create different volumes of batter.
    Only 3/4 fill your bundt pan. Use any leftover batter to make cupcakes. (cook about 15 - 20 minutes)
    When baking your cake, place a tray under it to catch any overflow.
