It's due to the application not expecting two separate inputs (two taps) at the same time, it only receives one at a time, so when the first input fades, it shoots over to the second input before the application can even tell the line to stop drawing. This problem can occur in many different programs even outside of drawing applications, though it likely yields separate results in a different type of app.
I've been figured that out when I first started flip a clip, the way I found out was that my hand accidentally just SmackDown on my phone (I honestly don't know how that happened but it just did) and my two fingers on my hand made a straight line. And that little trick is pretty useful too 👍
