Grilled Cuban Mojo (Mo-ho) chicken. This chicken is marinated in an extremely flavorful Mojo sauce, a mixture of fresh orange juice, lime juice, olive oil, garlic, cumin, and oregano. Take your palate on an adventure to Cuba with this delicious recipe!
Recipe( Can easily be halved)
∙ 2 Chickens
Marinade
∙ ½ cup Olive oil
∙ 12 Garlic cloves
∙ Salt & Pepper
∙ 2 tablespoons Dried oregano
∙ 1 onion (sliced)
∙ 1 tablespoon dried parsley
∙ 500ml Fresh orange juice (8-9 oranges)
∙ Juice of 2 limes
∙ 1 teaspoon chilli flakes
∙ 1 teaspoon cumin seeds
Rice with corn & bell pepper
∙ 2 cups white rice
∙ 1 onion
∙ 3 Garlic cloves
∙ 1 cup whole corn kernels
∙ 1 Bell pepper
∙ 1 chicken bouillon cube
∙ 2 teaspoons dried oregano
∙ 3 bay leaves
