    As a Puerto Rican chef, you did great. For some unsolicited tips, give the veggies at the beginning time for them to sweat in a higher temp to the point where they start to get color, then add Spanish green Olives and spices then give a a couple of stirs, after that add the liquid to deglaze any flavor in the pot, bring to boil, then add a fresh culantro (Not cilantro), add the rest of the ingredients, then simmer till done. We PRicans add more or less potatoes depending if it's too salty(Cause we cook often with cured salted meats that have different salt contents, like ham hocks, smoked hams, thick bacon in the veggies stage) and we use bell peppers and sweet peppers.       My recommendation would be to cut the vegetables smaller. I'm Puerto Rican and have NEVER had jalapenos in any beans.

      Perfect recipe, we are not going for being like some faction of the population, we are going for what is the healthiest, yet tastiest, not the tastiest-healthiest first...no animal products of flavors in it-that defeats the purpose of being long term healthy preventing cancers...soooo, this is thee perfect recipe for the long term health, yet taste-perfection.....may add 'shrooms though, and'or tofu (pure organic)

      My mom made this forever at least once a week, (I personally don't eat any meats) mom cooked pigs feet in the sauce. Now I say yuck, but growing up it was a food staple.. LOL dad was from Puerto Rico, but I swear I never remember there being potatoes in it.. Tia Letty cooked it many times also, never had potatoes either.. Feel like I missed out now.

      I lived in NJ for 5 years and was immersed in Puerto Rican cooking. The vegetarian option of the PR beans they prepared were AMAZING. No one ever added jalapenos and it was more of a soupy consistency.

    I am Puerto Rican and our main dish for beans are Habichuelas aka red kidneybeans, also as a Puerto Rican we add sofrito to everything which is a paste mixture of bell peppers, garlic, onions, tomatoes and cilantro that you puree. We also add a can of tomato sauce. But I'm open to change so I will try this recipe lol

    I made these beans and they were fantastic! I actually used sweet potatoes instead of regular and it came out wonderful. I served it with a side of coleslaw and pickled onions. Yum!

    Once again, an absolutely fantastic dish. I used 1/2 the amounts and this will make two large meals with some brown rice. I grew up in a town on Long Island that had a large Puerto Rican community. This could easily have slipped in among a number of dishes I have had there. Thanks again for all your help!

    I would add green olives stuffed with pimento, cilantro and a dash of liquid smoke to substitute for the ham. Puerto Ricans like pink beans but pinto is a good substitute.

    Hard to find but culantro also called recao is what takes it to a whole other level it's similar to cilantro but way stronger and fragile like basil but it's everything..if you look up how to make sofrito the recipes will come up on how to use the recao in your sofrito which would be the base for your beans and a ton of more recipes. Oh and your kitchen will smell amazing

      It looks very flavorful but here in Puerto Rico we do not use jalapeno and you need more water, recao not bay leaf the onions and peppers are more like a pure and it blends with the water and for color we like it really red and we use Sazon.

      If they are canned then you can just add them to the pot but if they are dry beans then they need to be fully cooked.

    For me a little heat goes a long way. I cooked some rice and beans about a month ago using some chipotle powder I purchased from eBay. It was so hot I finally had to ditch the beans. They were some Rancho Gordo beans, and it broke my heart to have to throw them out, but they were ridiculously hot. Last week I used Sate spice from Penzey's in my beans (delicious). I will have to try your version. It seemed like a nice round of spice. I love smoked paprika!!!

      sometimes when i make something to spicy i will add lime or lemon which cuts the spicyness, add more grains (ex plain white rice or more beans) to level out the spicyness, or if it's a soup try adding coconut milk or peanut butter :)

      You could've cooked more beans and mixed them. Not too long ago I made noodles & veggies with green curry that turned out way too hot so I just made more noodles and added more coconut milk and mixed them in.

    Edit: Hmm, it took a bit longer to boil the potatoes until they were tender (about 35 minutes) and I'm definitely gonna up the spices way more in the future. Great smell but a relatively mild taste!

      I usually soak them overnight, pour off the water, refill with fresh water and cook till soft.

    Although I'm sure your recipe probably tastes good, I have to tell you that this is definitely not a Puerto Rican dish. Puerto Ricans never use jalapeno peppers in their cuisine. What we frequently add is pique which is made with habanero peppers and vinegar and is used as a condiment to the meal. Another important ingredient that we use is an herb called recao. This herb is very flavorful it's a type of culantro. Typically the peppers, onions and recao among other ingredients are made into what we call sofrito and is used as the base of the beans. when I started to transition to a plant-based lifestyle I began omitting the meat products that typically go into Puerto Rican dishes such as tocino which is back fat and other oils.

    not organic, i would suggest not using it at all, ha ha
    no but actually yes
    and just a thot on water too
    i add bits at a time keep good attention to the dish on the stove and add as needed. instead of keeping excess water in at all. reason being the nutrients go to the water and out of the food
    therefore less water makes the nutrients reabsorb in food as water diffuses into the food. unless the goal is making congee to drink after or along side supper. just a thought as i was watching your presentation. more of a did you know or fyi thing

    Not sure why you titled this "Puerto Rican Beans lol?" Your ingredients were more definitely more Mexican. I am Puerto Rican and have never seen Puerto Rican beans made this way vegan or not. . . it is not even sautéed. Where's the liquid? The main point of the Puerto Rican beans is the "juice" which your recipe or at least final results show none. Again, why call this Puerto Rican Beans? Perhaps Spanish bean recipe would be more suited.
