We took an afternoon and met up with the ubertalented beverage director, Cory Starr, and he gave us an inside look at how they make premium, intricate tiki cocktails in a high volume environment. it takes a certain type of bartender to work at a tiki bar. the setup. 5 liquors in a cockatil. prob 12 diff crazy glassware that are super Awkard... diff ice...blenders... lighting shit on fire...

Tiki Tatsu-Ya is the BOMB! However, their miso orgeat is much too sweet, Liber orgeat is perfect.

4:05 It still baffles me that you would use a speed pourer into a jigger. I know some places have a rule you have to do it... but if anything it leads to under-pouring... economically I guess it makes sense.

Been there. Overdone, overcooked, overdecorated, overengineered. Five different rums in one drink = no individuality remains. Confusing excess with ambiance. A chuck-e-cheese for adults.

Sounds like tiki isn't your thing. You don't seem to comprehend that blending multiple bottles in a drink is foundational to tiki and creates a unique flavor profile. Maybe stick to Jack Daniels and Coors Light. Simple tastes for a simple mind.
