Good morning Al, with these trees that are very old, they use a semi-mechanised method of vibrating forks to loosen the olives from the trees, into nets around the base of the trees. The old method was with sticks, hitting the branches to make the olives fall into the nets and you still see this on smaller family farms. The trees are in a "chalice" shape to allow the sun into the centre of the tree. The new method, seen on the huge haciendas closer to Cordoba, is to have the trees spaced differently, 3 metres apart in their rows with the rows 5 metres apart instead of 3 metres. The trees are maintained in a christmas tree, conical shape and this allows for full mechanisation with a tractor shaking the tree from the base and collecting the olives in a hopper. The yield per tree is lower, but one man can operate the machine and only one other is required to trailer the olives away. So the operation is more efficient and therefore profitable.
