as someone whos used vr for sim racing, In my personal opinion, using the vr headset makes it much harder for extended play sessions, the weight on your head just eventually gets to you. Plus it gets really warm and probably sweat more for playing a video game. I personally would love to change to a 3 monitor set up, and just keep the VR for VR games. Congrats on the huge moves!
Thanks for the insight! Honestly got a bit queasy trying VR for the first time as well so might not be for everyone. Takes some getting used to.

Where are you that you are getting that much snow? My winter has been bare and I'm in SLC where last year was record amounts of snow. Also congrats on the shop and look forward to seeing what you do! I love what you're doing man. Keep it up!!
Congrats! Super excited to see the growth. I love seeing my favorite creators get their own garage spaces with lifts.
Racing sim rigs always sound cool, but I've seen them in multiple shops and most of the time they just collect dust. Couch and TV/media is a classic, simple setup. It's kind of like home away from home. Coffee table with a Keurig or coffee pot would be legit too. And lots of water bottles.

I recommend a fanatec wheel and pedals with a nice 50 inch or so. Keep it simple. Some Iracing and of course the gr86 cup car. If i was to recommend a track it would be Road Atlanta. Track has everything you could want.
