you cant customise how thick and thin your noodles are. Tonkotsu (not tonkatsu) noodles are usually hakata style aka straight and thin noodles

I like ichiran because it’s hakata style ramen. And I can’t stand shoyu or miso ramen regardless how good people say they are.
