I used to work at a five guys during college, and theres a trick to the frys. after letting the precooks cool for about 2 minutes, squish it between your fingers, the skin should not break. they should be a dull color. and for the final cooks, the should turn a golden color, and another squish test. if you split the fry in half and squish the end, it should almost look like mashed potatos. And when you eat it, it should have a crispy outside and a creamy inside. Hope JP and Julia see this!!
It's kinda weird to me how many instructions I've seen online got "five guys fries" that are so different from the actual process, and none of them mention the squish test. At this point, I can probably recite that whole thing in my sleep...

Yeah, you can see in the video that their precook is undercooked. The potatoes look undercooked

As someone who sells the parts to them, I can confirm five guys has a timer built into their fryers lol
Not the one i worked at, everything there we had to remember the timing and get it perfect every time
Lobster_Bread yâall donât have individual timers (trust me I have had MANY âąâ sand dmâs ask) but they are programmed into your fryer. Your gm might not have you use them, but it is programmed there!

I work at five guys đđ they almost got everything right except that we specifically use Red hot hot sauce, (I forgot the brand of BBQ), peanut oil, we donât prepress, we use mayo not butter for grilled cheese, and we use one grilled cheese and put the patty in between not two grilled cheeses with a patty in betweenđ
I work at 5 guys too man. they forgot to dice the grilled onions! Also the BBQ sauce is cattleman's brand.
