What is the clear gel you are using to stick the fondant together?

They are made of fondant and colored in gold. To make them I rolled fondant very thin and cut stars with star cutter.

Can I ask: how did you met it dry? In the kitchen counter? Do you put something over it?

I made it one week in advance before placing it on the cake and let it dry uncovered on a kitchen countertop.
To speed the process up you can add a little bit of CMC powder into the fondant.

I don’t know an exact name of it, but it is a tool for clay art.
It is an optional tool for this topper.

Thanks for the video. How many days before can we make the topper?

It depends on the humidity in your room, size of the rainbow, and quality of fondant.
Usually I make this topper 5 days - 1 week before the event just to make sure it would be completely dry by the time I would need it. However, usually it’s dry in 3-4 days.
You can also speed this process up by adding more CMC (or tylose powder), to the fondant and by placing a pack of dry absorbent (like silica gel) on top of the topper.

How do you know what size cookie cutter to use?

    • @cheshirebakery5312

It's a great question! It's a good idea to measure the thickness of one "fondant sausage" to roughly estimate how wide the rainbow would be, comparing it with the diameter of the cake you would like to decorate. Since fondant is soft and pliable and takes a while to dry, you can check if the rainbow would fit on the cake (even after it's done, but not dry yet), and change cookie cutter if needed.
The diameter of cookie cutter depends on the size of the cake. In my case, I needed the rainbow for 8 inches cake in diameter. If I would have a 6 inches cake, I would need to use a smaller cookie cutter.

I used CMC powder, but tylose powder will work great too.

I used water. It's also possible to use edible glue.
