I tried making carbonara years ago and it clumped and was just awful. I've since followed your recipe and have made it successfully many many times and it comes out just perfect, just like you are! Happy Mother's Day Nadia!

Tonight I made this dish for my family and only modified the quantity of eggs to 2 yolks+1 whole egg. The technique was much simpler than other recipes I’ve tried and the result was a delicious, creamy and complex dish. 🙌🏻🙌🏻🙌🏻

Carbonara has always been one of my favourites.
Always had to make with either bacon or pancetta, though, until recently when i came across guinciale. This was after watching this video, which made me *need* to find it.
I didn't think it would make too much difference as opposed to pancetta but, i couldn't have been more wrong.
Absolutely delicious and wouldnt have tried it otherwise so, thanks Pasta Queen, I'll be ordering the book.

Tried this recipe today. Well hard to find guanciale, but used a fatty, slightly smoked bacon instead. Final result... a rich in taste and balanced dish. Thank you for teaching us how to cook properly :)

Mama mia. I tried already meany recipies and they were all "gorgeous " just like Nadia:). She is really making a nice show and the food is simple and great , that's what Italian food (pasta dishes) are about. Of course you need some basic cooking skills, It's so much fun. This is what about Italian culture is about. I'm not Italian but worked there for some time and oh man I loved the country so much.

I made the perfect carbonara recipe for the first time, after following her instructions! The guanciale I found was a bit drier/harder than the one she shows in the video but I can't complain! It's the best carbonara recipe I've ever eaten! ❤

I've never had any problems when making spaghetti carbonara. The only yolks + 1 whole egg is new to me. Gonna do that next time I make it. Like next week probably.

Hi from indonesia ! I was so shocked when i learned the carbonara sauce was supposed to be made by egg yolks. Now that i ve tried out your recipe id rather cook it myself than order it from the restaurant no more heavy cream as the base sauce for me

I never tried guanciale but Publix has pancetta. Is pancetta ok to use as substitute for guanciale ?

I love watching italians watch chefs throw in peas, parsley, bacon, cream etc to make cabonara. Its hilarious and Nadia is no exception. Its simple the way she has made it and the western versions just crucify it.
