I've also been told that soaking your bluefish fillets in milk will improve the flavor.
The best way is fresh CAUGHT never ever ever freeze it...it doesn't freeze well unless you smoked it
best Bluefish recipe is to cook on cedar planks,,,,season them well....filet bfish well seasoned after soaking in milk for one week,,,,cook over fire....throw the fish out or feed to pet...then eat the wood!
soon as i make a catch off comes the head then i gut it and put it in a cooler on ice or cold beers. i fillet them as soon as i get home. if i catch a few i cut off the red meat in the middle of the fillets. i egg and breadcrumb the fillets and fry them in a pan in hot oil. no complaints yet

If you really want to get the best out of your fish, cut the ribcage out, then lay the filet on the skinside, go with the blade under the rib bones, press up and gently seperate them from the meat. It takes a bit of practice but like this you not only get way more meat, but also show some respect to the animal not killing it and putting half of it to waste.
