- Today, I will show you one of the easiest stir-fry recipes I make. Just add egg to tomatoes, and you'll have one of the most amazing, easy, and delicious meals. This can be a quick breakfast in 5 minutes! This Chinese style egg tomato stir fry is a staple in Chinese cuisine and truly one of my all-time favorite stir fry recipes. This is a versatile budget-friendly healthy meal, perfect for beginner cooks. It's also a quick, easy and very tasty recipe you are going to want to try.

INGREDIENTS
cooking oil for pan
4 eggs
3 Roma tomatoes
3 scallions
1/3 cup room temperature water
2 tsp cornstarch
2 tsp light soy sauce
1/2 tsp sugar
1/4 tsp chicken bouillon powder

I'm Hungarian and grew up on something similar, called Lecsó (eggs, tomatoes, yellow onion, and green or yellow bell pepper, all sautéed together, served on top.of sliced freshly baked bread)..one of my favorite dishes..😋

I make something similar without the sauce but add cheese and put in a tortilla or just have it with toast.

Ahh this is incredible, actually if you don't add the stir fry sauce it's a great breakfast so you can go either way but I can see myself eating this stir fry for breakfast too haha, there's something magical when you cook eggs with tomatoes :) adding this to my Food folder to make, I just ran out of soy sauce so will have make it when I restock, thanks for the best recipes, you're one of my favorite food content creators and cooks on CZcams.

I whisk 2 whole eggs, pour that into a frying pan, and then add lots of store-bought Pico de Giáo. Delicious. Very easy.

Delicious! A word to the wise.... one time when I made this type of dish I didn't cook it long enough or something and it was really soggy because of the tomatoes. LOL

You could definitely give it a try. The flavor of the tomato will be a bit tart, but I think it could taste good. :)
