Singapore Slaw is literally the best salad I've ever had. Doesn't even taste like salad really, more like a pad thai but without the noodles and instead of the tamarind sauce, you get a sweet, fruity taste from the sauces he uses. Tastes crunchy, sweet, fresh, citrusy. Very Thai and Vietnamese inspired. Goes really well with grilled salmon. So damn good.
oh my lord, i just realised why it's a Singaporean Slaw. that's the effin YU SHENG that we eat every Chinese New Year! Of sorts.
Even more decadent than the typical yu sheng, looks wicked good
Yeah in Vietnamese culture we also eat that too in most family celebrations like weddings, birthdays, house parties, and social gatherings.

The salad looks amazing. Of course, with these fine dining places, the trick with revealing recipes is that they involve so many steps and ingredients, it's almost impossible to replicate...or barely worthwhile. My friend--a notable food celebrity--just gave me the Thomas Keller cookbook. She couldn't get past the infusions. Everything was slave labor. I like the idea of two types of dressings meeting in the middle, though...and I'll try to do that!
It’s just one type of dressing he just applies it on the bottom as well as the top.

This slaw is based on Yu Sheng which is traditionally eaten during Chinese New Year in Singapore. The tossing is for prosperity and blessings but really I'm just here for the taste. I wanna be able to make my own version to enjoy any time of the year.
I have tried many many slaw. I can never go for a second bite. I guess I'm not a slaw person. But I would love to one day try this.
