More heartwarming: I am a school counselor and I was at a school counseling conference in my state. One of the sessions I was in was about advocacy and support for lgbtq students. There was a man in the back of the room who was probably in his 70s. He raised his hand and asked the speaker a question- she asked him if he was an elementary or high school counselor. He said “I’m not a counselor, but I have a wonderful granddaughter who is trans and I want to learn as much as I can so I can support her and keep her safe” I CRIEDDDD seriously!! So pure.

So interesting about the pasta and bread in Italy. My husband’s aunt is celiac and she can eat the bread etc. without any problems when she goes to Cuba. We were told that the proteins are different in their wheat (and in European wheat) than the modified strains that we grow here.

There is just something about flour in European countries that does not mess with peoples GI tracks. My one friend has a gluten intolerance but could eat everything bread and pasta when we went to Italy.

The main reason you probably cant eat dairy and bread is how its processed,not the actual dairy and bread. Italy makes their dairy and bread differently thats why you can probably eat it.
