  • 17 years ago, ex-chef Kevin Kent picked up his first Japanese knife, sparking an obsession that spiraled into half a dozen retail stores, two documentaries, a book, and hundreds and hundreds of sharp things squirreled away that until now have been unseen by the general public.
    We've been asking Kevin for years to do a video of his knife collection and finally, the time has come! We're starting with some stories of familiar favorites, classic blacksmiths (some of which are now retired), and a couple dubious forays into Kevin's own blacksmithing.

    I love his enthusiasm for his knives; it makes me feel less self conscious about how much I love the ones I have from you folks. (His story about sleeping beside one knife resonates with me. I was so in love with my Masakage Zero when I first acquired it, that I didn't want to let it out of my sight.)

    Hello Kevin. So, when are you writing a book on Japanese knives? Knife nerds like me would love to learn about shapes, why they are shaped the way they are, the type of steel and metals used, how to sharpen them, and hopefully profile the blacksmiths and knife makers that you are so enamored with. Your passion for Japanese knives is infectious and has fueled my own interest to a much greater height... thanks so much.

      Thank you for your input! We're writing a second edition of the book 'The Knifenerd Guide to Japanese Knives', which does include much of that info, but we'll be sure to dive deeper into those topics in the new edition!

    Great!!! Video of Kevin's knives and back story. Just imagining being around the actual blacksmiths and the generations of history in forging knives is awesome. Looking forward to part 2.

      Today I read about several of these stories in your book, which I have had for a week in Poland. Together with some friends, we ordered 9 pieces and everyone has their own copy today. Thank you Kevin for such a great read.

    I am tickled pink to be watching this, especially because I appear to have a sibling to the knife featured at the end. It's a shorter version (Santoku) of the Masakage Kujira by Ken Kaguera. Love it!

    @12:40 That Damascus Gyuto: 聖作 As your site mentions, it says "Masashi Saku". 别誂 means bespoke/custom/special order I think.
