What's a SMaSH beer and why should you brew one?

  • SMaSH beers are simple recipes with only 4 total ingredients, one malt, one hop variety, yeast, and water, about as simple as brewing gets. In fact, SMaSH stands for Single Malt and Single Hop. They can teach you more about beer and brewing than any overly complicated recipe could. Check out this brew day as I try my darndest to brew a SMaSH beer and end up learning some things along the way.

    Wait, this guy doesn't even have 1k subs?!
    I was sure it was a decent sized channel judging from the quality of the video. Nice camera angles, easy to follow what you're saying, concise and to the point. And a cute dog on top of that! You sir just earned a new sub!
    I have some experience with homebrewing meads, wines and ciders, most of which turn out wonderful, but I haven't yet made the step over to beer. Tried it one time even before starting to brew winish things (it ended in a catastrophe...)
    I am looking into smash beers at the moment as I think that would be a nice and easy place to start with homebrewing beer. Wanna do something along the lines of a Münchner Hell, as that is my preferred style of beer. Wish me luck!

    Great insights on smash s! And I also find that under pitching kveik voss works better but giving an extra day to avoid the acetaldehyde 🍏, cheers amigo 🍻🍻🤙🏼

    Great great ! I have a smash fermenting atm, Marris Otter and Styrian Golding, ratio of 4.6g/litre and there will be no dry hop, Safale S-04. ATM 5 weeks ! Your recipe is added to my list !

    I brewed a citra Blonde Ale SMASH. Was pretty good. Used 2-row and Citra. My system is small so to get the 5.5 gals of beer I need to add water at the end cause my ABV to suffer. This one ended at 3.8%. I’m pretty new to this so trying things out. Thanks for the video I enjoy watching.

      Sounds like a decent brew. I’m looking to brew something at that ABV soon. A summer crusher. I’m a fan of very flavorful, lower abv brews, especially if I’m gonna have 5-10 gallons on tap.

    I have my humble little 1 gallon fermenter working on a smash right now. Vienna malt with Northern Brewer hops. The yeast is CellarScience Cali dry yeast. Hopefully it turns out ok.

    Interesting experiment! Could be fun to see the same SMASH beer but with different water profile to see how it changes. Or different yeast. Lots of room to play and have fun there. Also more Ruben!!

    Excellent video Peter. Golden Promise and Mosaic is a great combo. I haven't had a ton of SMaSH beers but this combo shines in Founders Mosaic Promise. That 4k 👍 I don't know why I didn't notice before but it looks good.

    Great video! Some of my favorite beers have been smash beers. I’m planning a pale with Cashmere smash because I’d like to see what that hop does on its own, cheers🍻

    Sorry i've just been binging your videos today while working from home haha, Going to try to try my first smash beer in the next few weeks. I've primarily been doing 2.5 gallon BIAB brews with just two grains, usually a 5:1 ratio. Also you and the dude from Barley and Hops TV should brew together that would be funny.

    That flavor you're tasting is the dry Voss kveik yeast. It may die down a little but not by much. It's too overpowering in my opinion.

      Yeah I’ve had dry Voss beers without that flavor, but they were higher IBU and more complex, so that may have been covering it a bit. I’m sure if I’d let it ferment a bit longer, it would have mellowed out a bit. It’s still a good beer, so I’ll keep tasting it to see how it evolves. Very green when I tasted for this video.

      Haha the baby jam jar? It’s from an advent calendar of jams. Not sure how to order them individually unfortunately. Lots of fun little containers out there though.

    hey Peter I noticed that you usually use a full whirlfloc label for a typical 5g batch. My tablets say to use half for a 5g batch. Should I just use a full one?

      It just depends, and I bet it doesn’t make a huge difference. Half is probably enough, but I put in one because it’s a nice consistent unit. Are you using some sort of dam to keep trub out of the fermenter and in the kettle? I mostly find whirlfloc helps proteins coagulate in the boil and get more clear wort, rather than impact the clarity of the final product.

    Hey Peter - any chance this recipe is on Brewer's Friend? Giving it a shot and wanted to make sure I captured it all. Also, why do you ferment this so much warmer? Thanks for your help and the video.

      Sorry this one isn't on brewer's friend, everything you need is in the video, but what I want to stress is simplicity here. Some things will change depending on your system, but pick an IBU level you like, if you want more late hopping, go for it! SMaSH beers should be simple and educational. Help you learn what you like! And the reason this is warmer is because kveik yeast can ferment fast at warmer temps without off flavors. The warm temps can also boost citrus and sweet fruit flavors with this yeast.

    Hee Peter I was wondering why you shake the fermenter before adding the yeast? I saw Clawhammer Supply doing it the other way around, adding the yeast and then shake it up.

      The reason I do it before is to hopefully keep any dry yeast from sticking to the sides of my fermenter above the level of the beer. Maybe I’m paranoid, but I’ve seen some of my dry yeast stick up at the top and never make it into the beer. This would probably not be a problem if I rehydrated my dry yeast… also I want to be gentle on the yeast and let it do it’s thing at its own pace, but once again, that may be paranoia haha

    I just brewed H4L’s Orange Creamsicle IPA and used this yeast. Very curious to see how this yeast will effect the flavor. It’s cold crashing now and in the keg tomorrow. Hopefully tasting by Memorial Day. Great video and awesome little brew-buddy! 🍻🇺🇸

    Is it no longer a SMaSH if you add any non-malt adjuncts? I just started 4 gallons of Pilsner based beer (maybe only one SMaSH?) this past weekend all with Citra to understand the malt and some adjunct differences. I did one with pilsner/rice syrup solids vs pilsner/dextrose vs only pilsner, and a pilsner/cider graf just for fun.

      Good question, I don’t know for sure a technical answer, but I would say no. With that said though, there is no bible of SMaSH beers or police coming to check on you. Experiment how you like and try to learn each brew! I love adding oats, acidulated malt, and/or carapils to a bunch of my otherwise one malt beers, I know roughly how they impact them too. Building on a smash beer is the idea. It’s a starting off point.

      ​@@ProstwithPeter I definitely appreciate the idea that I'll learn way more this way than clones! Almost half a year into brewing I was racking my brain for weeks since my last brew thinking about what I wanted to make next before deciding that I'm not learning that much more if I do clone after clone or different styles one after the other besides practicing recipe reading and recognizing ingredient names vs doing something that really breaks the components down to their individual effects and now I'll probably be brewing SMaSH's or similar simple recipes for a good time.     I copied Apt. Brewers SMaSH Redx/CTZ.
    Turned out good... but aroma isnt as strong as I'd like. By still a great beer.

    I can tell you what SMASH wasn't my favorite. Golden Promise and Waimea.
    I had the same problems with that brew.
    FG was 1.016 after 7 days. It was not good at all. I conditioned it for 2 weeks
    And it turned out decent.

      @@ProstwithPeter I never have good luck with US 05. Such a diacytal bomb.
      I think the issue with the Kveik I've been using is strong lemon flavor if I ferment too hot.

      Yeah, I’ve had some interesting flavors with hot kveik. Some more welcome than others. And yes! US-05 can definitely get diacetyl, but I usually let it ride and warm it up toward the end of fermentation. Seems to work out okay.
