Hi, can I use fish on the 32cm rectangular grill ?

He did the "water test" completely wrong. If the water hits the pan and vaporises instantly it's too hot. If it sits on the pan and sizzles for a bit it's too cold. The water should form into a bead and dance around the pan if it's the right temperature. It's known as the Leidenfrost effect.

Depends what you're cooking. A nice fatty steak needs it to be ripping hot.
