I have more questions - can you peel off a 7, 2 and Ace making ten? Or only peel off tens and pairs of ten? I can't find any other descriptions of this game anywhere - are there other names of it?

Only pairs or singular 10 cards! So if there is a 7, 2, 3, and an Ace on your board, you can only peel off the 7 and the 3.
