Smoked Chicken Breasts, Weber Genesis II Gas Grill with iGrill 3

  • Smoked Chicken Breast with Apple Wood Chunks. On a Weber Genesis II E-310 Propane Gas Grill. Using iGrill 3 Ambient and Meat probes for temperature checks. Screen captures from the iGrill app are shown in the video. To display iGrill tracking temperature and leave no guessing to when all meat is fully cooked.
    D Grill's Smoked Chicken Breasts Recipe
    Ingredients:
    6 and 1/2 pounds of skinless boneless chicken breasts
    Olive Oil, to coat
    Mrs. Dash Chicken Grilling Blend, to taste
    Salt, to taste
    Black Pepper, to taste
    Wood for Smoking: Apple Wood Chunks, soaked.
    Instructions:
    1. Cover the chicken breasts in a coating of oil. This will help the spices stick and maintain juicy meat.
    2. Sprinkle on all mentioned spices to taste.
    3. Heat the grill to 450° F.
    a) If smoking the meat, have the wood chunks already setup in the grill during heating to temp and wait till they are smoking.
    4. Add the chicken to the grill.
    5. Cook till the meat is at 170° F internal temperature. You can use iGrill 3 if using a Weber Genesis II Propane Gas Grill or another meat thermometer if using a different grill.
    a) This may taken between 40 -50 minutes, but check meat temp for safety.
    6. Enjoy!

    Great video! I'm going to try to smoke some chicken breasts for the first time on an old propane grill. I'm going low sodium with the seasonings and using mesquite chips. Thanks for the inspiration!

    Hi, just wanted to say thanks for the inspiration. I'm currently sitting in front of my weber in Ireland waiting patiently for my first pork butt to finish. I've used a home made Memphis Rub with an Irish Cider twist. Keep up the great work, I also hope to at some point share my interpretations of true BBQ with everyone.

    Actually 170 degrees is too high because there is carryover after you pull them from the grill. The key is to keep the temp probe inserted in the meat after you pull them and allow them to rest.

    I just bought the Weber Spirit 2 because of your videos, do you believe it's worth getting the I grill 3? Here in Canada it's $140 with the 4 probes ?

    Do you find the ambient temp sensor for the igrill useful compared to the inbuilt lid thermometer?

      +Nick Jackson I like the ambient probe, because I can sit in my kitchen and know what the temp is. When I only had the lid thermometer, I had to run out to the grill whenever I wanted to know the temp. Which is especially a pain when low on propane and wanting to know the moment it runs out and temp starts falling.
      I am running much less just to check temps now. 🌡️😎
      With my 8+ hour cooks, I don't want to sit outside literally all day and night 😃

      D Grill ok yeah that does make a lot of sense actually. Do you find the temp is inline with the lid gauge? Also any top tips on placement inside the grill??

      +Nick Jackson Both are close enough. Some folks get uptight wanting a perfect match, but that's fantasy thinking.
      See where I put it in the video. I find that is good for me.
      But like I said, of you want a perfect match, give up 😂

    How far can you get away from the grill and still have the temperature data on your phone/tablet?

      +Gilberto Rodrigues It was fine, but less moist. I have used iGrill 3 from the start when making them since then. I cook them to 175° F, to ensure all cooked and it's fantastic. I have cooked these about 3 times now.
      They are so good, I don't want to get them at restaurants any more. I keep wanting my own. Kids love them too.

    How come we don't see any smoke when you open the grill?

      The visible smoke is actually the least beneficial for flavor and smoke penetration. There are times it is visible, but I intentionally wait for a moment where I can work without being smoked up.
      Do it for yourself, it works.

      I am the father of 3 boys, who have no interest in being on camera. Although one likes being my part time cameraman, when he's in the mood 🤣 .
      We eat the food. They stay with me for the summer and other times of the year. So between myself and my boys, the food gets consumed 😎 .

      I showed the meat is cooked. Who says grill marks are required on both sides? Cause the meat is proven cooked in the video. That answers your question.

      Actually, to get a good preheat, turn on all burners and warm the box. Read the manual.

      +xFATSAKSx I have personally had mixed feelings about the topic of washing meat, that will be cooked beyond doneness. Given I always cook beyond a well done temp and use a meat thermometer.
      I personally am feeling agreement with USDA food prep guidance:

      If it's being cooked well done and beyond. All the bacteria is going to be destroyed.
      While washing seems protective, the true protection is in cooking the meat well.

    Nice video may I suggest no gloves and wash your hands frequently yiu touched all spice jars and cardboard with your chicken hand should throw out salt now and wash every glass container

      No, you have to watch carefully. I didn't cross contaminate as much as you think. And anything that was is disinfected. I don't want it on my hands, end of story. Do what suits you.
