Great job madam! My grandmas and aunties have been canning forever, and I’m happy to see people getting on board to preserve their own food! Tips for beginners: if your jars knock around in the pot, place a small towel in the bottom of the pot before adding water and jars, this will help protect them. When you’re done boiling the filled jars, and they’ve cooled down completely, MAKE SURE that the lids are sealed before storing. Sometimes lids fail to vacuum seal properly and this will cause food to spoil. To test the seal, press the center of the lid, there should be no sound or movement. If you hear a sound when you press down, or the lid moves up and down, your jar isn’t sealed properly and will need to be refrigerated not stored on the shelf. Happy canning everyone!!

Thanks for sharing sis! I’ve been experimenting with canning chutneys for a while. I find that after the canning,the mason jars do look a bit chalky ( for lack of a better expression) 😀. What I tend to do is wait till it’s cooled completely, and then I use cotton balls dabbed in some vinegar to clean the jars before storing.. it returns the jars to its glossy state.. but hey! I’m sure you have a hack for that… just thought to share what I do😌
Did you use a pressure canner or a regular saucepan. I have a glass top stove and I don’t want to mess it up with the pressure canner. Thank you.

Excellent! But why 45 mins? Why can't 10 mins or even 5 mins? Is that the time germs get killed? How about food over cooking? Any tips on that?
You need just a few minutes. Why you go longer is to make sure that all the contents of the jar is at least 100c. Otherwise only the contents close to the glass will be boiling
Should I put the lid on tightly or a bit loose before I place it into the boiling water? And should the pickle/ food be cold or hot while it's placed into the jar? And won't the glass break when you boil it for 45 minutes? I'm asking because I don't know and don't wanna make a mess.
May I ask... why don't you have a rack on the bottom of the pan to keep the flow under the jars? I learned it that way and all canning-pots have them.
Washing the cans in dishwasher at high temperature also does the sterilising

I have question. Can I use different jar? A normal glass jar without vacuum sealed ? And it is not necessary that having canning equipment or pressure cooker? Thank you
Please can this process work on raw coliflower so it lastes for a year and be used for fraying it any time
Is the process the same for fruits, & greens?
The choice of preservation method (water bath or pressure) is also influenced by the acidity and sugar content of the marinade. With a marinade with a higher acidity or sugar content, many vegetables (which have low sugar and low acidity) can be canned in a water bath. Therefore, finding a good recipe is key. Am I thinking right?
Does the 45 min boil not cook your food more? Seems like it would over cook it. Especially meat. Or is it just simply the process of canning.

Don’t know if anyone can answer this but I’m trying to cook and jar foods for my baby, for example sweet potatoes. How long of a shelf life of typical homemade baby food? Does it need to be refrigerated or frozen or can it sit out? I’ve tried looking around and couldn’t find a straight answer

Sure! Typical Jam recipe is equal parts fruit - cherry to sugar, lemon or lime juice, optional pinch salt, cook on low medium heat, while stirring, till fruit is broken down into jam consistency, and sugar is dissolved. For acid amount, use 1 tsp to a cup of fruit.

Thank you so much! If I do this for already cooked food, will the meat get overcooked when I steam it again for 45 minutes? Or should I put the food and sauces in raw so that the 45 minutes of medium heat is what cooks it?
Wanting to try canning oorogai. But I don't know if I should cook it then can it or put everything in raw so the 45 minutes of heat is what cooks it.
