For video purposes we do not wear gloves. We do wear gloves hairnet and mask in the kitchen assembly lines when we produce food for the public. International standards do not require chefs to wear gloves, we are only required to wash our hands in a clinical standard. I hope you watched the demo and learnt a little. We use plain paper because it bends. Photo paper is hard to roll and pull
