Weddings in India are on a huge scale, and this was a wedding reception in Kannur, on the West Coast of India. We arrived and immediately headed back to the kitchen, where the amazing Chef and his team were busy preparing huge amounts of food for over 3000 guests.
There were a dozen pots of biryani going over fire, and inside the kitchen, there were huge pans of curry, and the most impressive dish - a pan full of 1,200 chickens, marinated in chili and ready to be deep fried.
Something that really impressed me is the head Chefs ability to organize and manage - making sure to get flavors right (even though thereâs no written recipe), without forgetting any ingredients, and all while keeping a schedule so the food is ready when the guests arrive. Imagine doing that for 3,000 people. Truly skill, knowledge, organization, and experience.
The food was spectacular, with lollipop chicken, fried chicken in spices and chili, chicken curry, biryani, a variety of south Indian dosa, and a multitude of over 25 different dishes. What a meal and experience, eating, cooking, and watching the food being prepared at an Indian wedding receptions in Kerala, India!

I live in Switzerland and last winter I catered at an Indian wedding of a rich Family from Kerala India. It was the most amazing thing ever! After the ceremony was over and we stopped working, the cooks and workers invited me to eat with them. The food was insanly good and the people were the nicest!!

Not everybody can cook at that scale. Usually, mass prepared food often lose their quality. But if that food is as delicious as it looks, then you can be sure that the chef is a legend. đ
L Nicolas practice makes perfect. They are doing this kind of preparation for 100s to 1000s of guests on daily basis. Also they gained knowledge from their predecessors and continuing.. most funny thing is that most of those chefs may not have studied in a catering college .. experience and skill

Idk what I'm doing in Mauritius. I would have been happy if I was born and lived in the land of my ancestors. At least I would have been surrounded by my people and culture. I can't say that's the case here in Mauritius

Yes here people invite everyone in his village or area . Old people here taking that as a Pride.
I think it's because sharing a meal with the community is a huge part of any event here - right from baptism, house warming, wedding and even funeral. It's probably a less one-to-one relation than the wedding with 50 guests though, but more about the entire community being involved.
Mark we absolutely love your video but this one is somehow special especially seeing the elders so much respect to them and their culture. Kerala is beautiful
