things are heating up on wok from home this week and tonight steve is firing up the wok to bring you the legendary firecracker curry 🔥

the dish

120g jasmine rice (any rice will do!)
1 tbsp vegetable oil
2.5cm piece of ginger
2 garlic cloves
1 white onion
1 red pepper
1 green pepper
2 spring onions
80g mangetout
2 chicken breasts
1 red chilli
1 dried chilli
100ml firecracker sauce

garnish
-
1 tsp shichimi or dried chilli flakes
1 tbsp toasted mixed sesame seeds
1 tbsp sesame oil
2 spring onions
2 lime wedges

50ml yakitori sauce
50ml veg oyster sauce
100ml sriracha
2 tbsp veg oyster sauce
50ml vegetable oil
2 tbsp dried chilli flakes
6 tbsp runny honey
3 tbsp sweet chilli sauce

1 tbsp sake
1 tbsp mirin
6 tbsp light soy sauce
1 tsp sugar - Jak na to + styl

Check out the firecracker sauce video, where he stir fries the cauliflower with this sauce at the end
used to work at wagas. it is made using the firecracker sauce, says so on the menu. from observing the kitchen, they coat the cauliflower in some type of flour, maybe a batter don’t know what, deep fry that and then finish it in the wok with red onion and the firecracker sauce
When you have left over firecracker sauce mixed do you need to cook the sauce before you store it in the fridge? Or can you just mix the ingredients together for the sauce and refrigerate it ?
Thats what I want to know aswell. How do you store the sauce?
The cookbook says the firecracker sauce can be stored for three weeks in the fridge in an airtight container

can i just use Kikkoman Yakitori Sauce for the yakitori as sake and sherry seem pretty expensive just for one ingredient

@@katieanna7587 it still baffles me why they took it off the menu in the first place. I used to love eating after a shift on the floor. The only thing that got me through a double or a triple. Ugh. The life I lived was good when the grilled duck ramen was still on the menu

Why does oyster sauce appear twice in the firecracker sauce recipe in the video description? Shouldn’t one of them be mushroom sauce?
I noticed that too. In the video at 3:05 it shows the correct recipe - 2 tbsp fish sauce not veg oyster sauce. Hope that helps.
How come fish sauce isn’t in the list of ingredients? But it IS used.
The recipe that pops up on the screen at 2:53 has it, but you are right, the one in the description doesn't.

Does anyone know if it still works without the yakitori? We cant have alcohol in the house so I cant make it...
Of course its mostly for sweetness. Id add a lil honey or just a tad more sugar and water
I would advise just using the soy sauce and sugar if you can't use alcohol (sake, mirin). I definitely wouldn't skip the soy sauce, you really need the salty and savory taste.

Nice presentation. But the firecracker is a damp squib by world standards. The amount of honey and sugar is insane.
its a westernized asian dish after all. All asian dishes turned real sweet to fit western palate.
