    Zucchini pesto is a great classic of Italian cuisine which is mainly made in the summer when the zucchini are in their best period. Obviously they can always be found at the supermarket, in any season, but as always I advise you to indulge in the seasonality of fruit and vegetables. It can be done in many different ways: the zucchini and almond pesto, for example, is very good, but I propose this version with walnuts that I honestly like best.
    Even if this cream is special even simply on croutons or on bread, pasta with basil pesto is delicious, simple and very quick to prepare. In this case I used spaghetti that looks great on it, but if you want you can also choose a different pasta shape.
    If you want to make this dish creamier you can make this zucchini and ricotta pesto, in this case you will need to dilute the ricotta with a ladle of pasta cooking water.
    If, on the other hand, you want to give something extra and, perhaps, propose something more refined for a dinner, I suggest you make pasta with zucchini and shrimp pesto that always impresses everyone.
    ► Ingredients to prepare the zucchini pesto:
    Spaghetti 400 g
    Zucchini 800 g
    Basil 20 g
    Parmesan cheese 60 g
    Walnuts 30 g
    Garlic 1 clove
    EVO oil 80 g
    Salt to taste
    To serve
    Salted ricotta to taste
    Black pepper to taste
