Hi everyone! Today I offer you 2 delicious meatless recipes based on aubergines.
RECIPE N1
Delicious pan-fried rice and aubergine meatballs are ideal for lunch or dinner for the whole family! They are so crunchy on the outside and soft on the inside that no one will be able to resist! Just a few simple ingredients are enough to prepare these delicious vegetarian meatballs. I do them often and I never get tired of them!
Ingredients:
- 1 glass of rice
- 1 aubergine
- 1 tablespoon of tomato paste
- 1 onion
- 1 clove of garlic
- 3 tablespoons of parmesan
- 3-4 tablespoons of breadcrumbs
- 1 egg
- Parsley
- Salt and pepper
- Oil
