She can't. Her body has very little muscle she won't ever make 125 on the dot.

If she did go for it, that would put her out of any title defence for the 135 and 145 for a long period too. Not sure the UFC would allow her to hold 3 belts trying to juggle title defences

Holly Holm is not the only woman to have held a belt in the UFC she hasn’t fought. There’s something called Strawweight division interview lady.
I think she knew that, but there's no way Amanda can fight for the Strawweight title. She's way too big. That would be worse than Cyborg trying to fight at 135
It might not have been worded right, but I always understood it to mean she's fought everyone to ever hold the 135 belt specifically... except for Holly. I mean, that's all it could ever mean, as she's not fought Montaño, Andrade, Namajunas, Jedrzejczyk or Esparza otherwise. 😅
