Bitter gourd and Bimbul sweet pickle

  • Bitter gourd or Karathe is one of the best vegetable... Bitter but tasty... Along with sour, sweet and sauce it makes a great combination. Try this easy pickle cum curry with Karathe (Bitter gourd) and Bimbul.
    Ingredients
    Bitter gourd 1/4kg
    Bimbul 10 big sized, jaggery to taste
    Kashmiri Red chillies 7-8
    Chana dal, mustard and Dhania - each 2spoons,
    Methi - 1/2spoon
    Haldi - 1 small piece
    Hing-kabuli chana sized.
    Little tamarind. Salt as per taste.
    Procedure
    First cut the bitter gourd into roundels. Pressure cook it with Bimbul, salt and jaggery. Fry red chillies on low flame
    with little oil. Then fry each one separately. Grind all these together with little tamarind to make a fine paste.
    Add this masala to the cooked bitter gourd.
    Season it with cocunut oil, mustard and curry leaves.
