Probably Turneric, its orange in some countries, they call it java rice, but in some places, use only food color. No doubt they will use turmeric in the first world countries. Unless New York has become a third world zone too like San Francisco.

The cycle is: Great restaurant becomes local favorite, usually amazing food, great price, very chill service.
Great restaurant gets bought out, sells out and becomes more of a tourist spot.
New spot is always there for the locals to find, the next sell out is always right around the corner. And by the time that nice little spot sells out, the big corporate one is in the past, or even bigger and worse than before. Just read about how Chipotle started for example.
Chipotle is owned by the same people who own McDonald's

It's silly to call that selling out. It's called expansion. And to expand you have to standardize across locations. That's why they do things like sauce packets. Will it be as good? Certainly not, but Halal Guys is now international with stand alone restaurants.

Used to get these guys a lot, but the quality changed after time told its journey. And now it feels boring and bland, especially without the sauce. If you have spare time and budget, I recommend making the chicken/lamb over rice yourself, it's easy and delicious.
Someone was knocking this food stand in New York. I don't know, I am only familiar with Halal Guys at Wilshire and Mariposa in Los Angeles. That place is amazing. You must go if you are in L.A.

They’ve changed a lot ever since Covid happened. Before Covid even happened they got rid of the sweet juicy lamb they used to sell. Now it’s been 6 years since I’ve been to the cart😔

I used to eat this back when it first came out. I'm talking 2000/2001 when it was five dollars for the combo platter and a dollar more for soda. Perfect food after a long night of partying. It's VERY different now. Bring back the original oily gray rice and beef. The white sauce is still good but not what it used to be. Sadly gone corporate....
Well they slid downhill here in Orange County CA - it's super salty - not at first but when the set up crew moved on the chefs lust salt the hell out of everything. Better local stuff all over.
there's no good halal guys in the west coast. to be fair, though, any in-n-out past like nevada sucks ass, so i guess that's the tradeoff.

Around 15 years back it used to be the best. Now the chicken is dry and tastes like masala rice. But white sauce is still best

Throughout California and the west, there is a chain called “Falafel Corner” which essentially serves this exact same cuisine. It’s usually good, and sometimes great, and sometimes shit. Much like I’ve heard Halal Guys is. But HG has this crazy internet aura hyping it up constantly.

Back in the day, the platters were only one size and price. They packed it so much, the top wouldn't even close properly. Last time I was there, 3/4 full. So disappointed.

In Germany we simply call it a Döner Teller (Doner platter) and u can find street food like that literally at every corner. (Max. Wait time is like 20 mins. I'd rather not go to a popular tourist spot in NYC and wait 2h to get food 💀 but damn they must really be good if people are willing to wait so long
you can find a lot of unpopulated street vendors in nyc too, there are a lot of food carts and food trucks selling similar stuff, halal guys is mainly because its a tourist spot.
