  • This week’s drop is Ethiopia Hambela by Anchorhead! Hailie shows you how to brew on Stagg X and XF and gives some tips on XF brewing.

    Pour-Over Recipe Stagg X
    23g in, 350g out 205F Temp
    Ode Setting: 3 (Medium-Fine)
    Pour 1: 50 grams (Bloom 30-45s)
    Pour 2: 100g to 150g
    Pour 4: 95g to 345g
    Pour-Over Recipe Stagg XF
    40g in, 600g out 4:00 brew time, 205F
    Ode Setting: 4 (Medium-Coarse)
    Pour 1: 80 grams (Bloom 30-45s)
    Pour 3: 200 to 450g
    Pour 4: 150g to 600g

    Loving these videos, thanks so much for producing great content. I have two questions, 1.) Do you all use the Fellow Shimmy Coffee Sieve with the grounds before brewing? 2.) Any thoughts on using a device such as the Melodrip or Hario Drip Assist or creating a Fellows version? I have been using these and find that it reduces agitation in the coffee bed and helps my pours draw down faster and also allows me to grind a bit finer. Just curious if you have experience with something like this for your brewing?

    thanks for the vid...you are missing "Pour 3" from the X and "Pour 2" from the XF in the description. Also, would you consider reporting the grind sizes in approximate microns?

    Fascinating......at nearly 5 mins into this clip I can't help but wonder why the prescribed method of use for these new brewers/drippers isn't being used.

      Just try with and without a filter. Without is probably gonna be slightly like a french press.

    Is the Grind setting for the "old" standard Burrs or the 1.1?

    When you're suggesting to pour around the side walls, will this not cause a significant amount of bypass particularly as its a wavey filter?

    I think these videos can definitely be condensed down to 10 minutes given that a lot of the basics are being repeated across hundreds of videos from Onyx, James Hoffman, Sprometheus, and countless other coffee CZcamsrs. I think that if someone is subscribed to the service, they're familiar with the basic concepts talked about in the first 3:30, such as preheating, etc.
    I appreciate the grinder information! Maybe a comparison to a basic grinder like a Baratza Encore or widely used Commandante for those without the Ode would make these recipes easier to understand with grind size given that v2 Ode burrs are under development and other grinders' burrs' micron measurements are being used in comparisons quite regularly.
    Overall the videos are getting better, just a little too much fluff. X vs XF information was fantastic also!
    Being able to see the brew bed to align with timings would help tremendously, and maybe some soft background music to make it less "awkward".
    Huge props to having the recipe available to screenshot - a lot of CZcamsrs gatekeep that for some reason.
    Also huge thank you for making these videos!

      Yes we're still finding the balance between the basics and how nerdy we want to go! I think we'll be making a few just stand-alone videos (how to brew a pour over) and then we can reference them in the drops vid. We're still setting up our space for filming and we need to get an overhead camera to show the brews a bit better and yes to music (I am by no means the greatest video editor haha). Things are coming along smoothly and we're really excited to see how the vids evolve! Thanks for writing the suggestions :)

      @@FellowProducts I like nerdy coffee videos they fulfil my passion for amazing coffee. For me it would be best if you just keep the videos like this and make a more simple version of them for those who can't handle the nerdiness.
      Greetings from a coffee nerd in Iceland now at the time of writing enjoying a cup of Ethiopia Konga Natural roasted by Kaffibrugghúsið brewed with Fellow Stagg X dripper and Stagg EKG kettle. Products I love for their quality of build,great functionality and simple and stylish look that I'm proud to display in my kitchen.
      I also highly recommend brewing Colombia Finca El Obraje Geisha or Caturra with the fellow Stagg X. Simply a stand out farm in Colombia.

    Xf wasn’t call xf was plain Stagg pour over but when they bout Stagg x they had rename pour over and call xf

    Are these any good for espresso? They seem a bit lighter

      I did dial this in for espresso and I thought it tasted quite nice! If you're into punchy fruit like lemon jumping out in an espresso this is great. I also found the natural funkiness to come out a bit if you're into it. Definitely a fruit forward espresso but it'll require some experimenting when dialing in.

      Hey Natalie,
      So I did dial this coffee in as an espresso and I'd try 18g in 36g out in 30-35s and then a longer ratio of 18g in 54g out in a shorter time of 25-30s. This is on the lighter end so it's a bit more difficult to pull but you'll get 2 varying styles of shots and you can then hone in on what works best. Of course this will depend on what grinder/machine you have!

    This is getting a bit complicated. Fellow seems to make user friendly products but this new language around Burt grinders and the one the barista in the videos is using and what I have here at home makes me think that my grinder is missing something.
