You forgot the cheese. I've made this sausage with pecorino romano, and it is absolutely epic, although I think the pine nuts can be omitted, as they don't really add much in the end

I just wanted to let you know that putting the pork in the freezer 45 minutes to an hour ahead of time is way less strain for the grinder than freezing it solid like you seem to do. The grinder seems to be on its last legs, so it's understandable it would struggle, but it would wear out much less quickly if you didn't throw rock solid pork ice cubes in it.
it has probably already said a milion times but in italy we cut open our sausages in the middle and cook them like that, they get more crispy and overall tastier

Have you considered getting a second rack for your toaster oven? If you put one in the oven above the first rack you can set sausages on the upper rack for better air circulation and skin crisping, then set a small sheet tray on the bottom rack to catch run-off.
