- It’s fall, so mushrooms are in season in Japan. I bought five different varieties of them to make a Five Mushroom Risotto! Japanese mushrooms lend themselves very well to risotto, featured in this video are: shimeji, shiitake, eringi, maitake, and enoki! Of course, use the mushrooms that are available to you, the method remains the same!

Ingredients 3-4 servings:
Your choice of mushrooms
300g/1 US Cup of rice
½ onion
4-5 cloves of garlic
200 ml/7 oz white wine
4-5 tbsp of butter
Olive Oil
Parmesan Cheese
Chopped Parsley

Wow! There really is a big choice of mushrooms in Japan. We mainly have button, portobello and cremini here in the US. Is that your new knife? Does a great chopping and slicing job!
