**Room temperature is around 75-78F/24-26C - after 1 set of S&F, lamination and 3 sets of coil fold 3.5-4 hours or longer fermentation until 80-90% rise. If the room temperature is higher or lower the fermentation time can be shorter or longer**

**실내온도 75-78F/24-26C 1번 펴서 접기 라미네이션 3번 말아서 접기한후 3.5-4시간 거의 80-90% 부피가 늘도록 발효해요. 만약 실내온도가 높거나 낮으면 발효시간이 짧거나 길수 있어요**

I use less salt than many bakers would use. Yes it’s enough salt and of course you can add more salt.
It’s almost blueberry season. I am planning to make bread with double amount of blueberries I used in this recipe.

Hi again, I am in the coil n fold stage. For the starter, 40g starter, 40g flour,22g water, I am short of a few grams of final starter. Is that ok? Will it affect the dough? Thanks.

No problem with a few grams less starter when you make any recipes. Some water evaporates and it will not affect the outcome.

How do you do the puree? where is the sweetness in this bread? is it in the puree? Do you add sugar to the puree? I am now sure how to do the puree

You can blend the fresh blueberries like you would make smoothies. No sugar added. Just fresh blueberries. You can also mash the fresh blueberries - it will not be finely smooth and leave some pieces of skins but that’s ok. It has some blueberry taste and delicious without adding any sugar.
