Idiot Proof Stuffed Acorn Squash

- Hey what's going on everyone! Well I was able to film some video's over the weekend despite having a newborn at home. Kudos to my awesome wife for being cool with me filming. That being said though, I am exhausted so I decided to make stuffed acorn squash. Its very easy to make, and just jam packed with rich flavours and hearty goodness. This has become a dinner we make often in our household because of how easy it is/ and how good it is. I think you'll like how this turns out, and if you've never made it before, I highly encourage you to try making it yourself. Ingredients:
-2 acorn squash cut in half
-few glugs of olive oil
-pinch of kosher salt
-freshly ground black pepper
Stuffing ingredients:
-3 large Italian sausage
-1 stalk of celery diced finely
-1 red gala apple diced finely
-1 large white onion diced finely
-4 cloves of minced garlic
-1 cup white rice
-1 Tbsp ground sage
-1 Tbsp rosemary
-1 1/2 cups shredded cheddar cheese.

Oh this looks awesome, I love acorn squash! Definitely a good fall recipe, I’ll have to give this a try, love the addition of the apple too, I feel like that really adds to that fall hearty meal vibe lol, looks like such a good comfort meal, especially with all that cheese! 😍🤤

I had squash last night for dinner, but it wasn’t anywhere near as fancy as that. It was just salt and pepper and butter. I wish I had some brown sugar but I ran out. But I fully intend on making your recipe.

Do you eat the outer part of the Squash too? I’ve never had acorn squash but your recipe has caused me to go buy one. 😏
You can eat it if you want to, just clean it very well first. I eat the skin a lot of times
