Understanding the parts of a pressure canner as well as the process will help you feel much more confident as you begin pressure canning. I am a "Born again" canner. I used to to can tomatoes and green beans years ago. These "newer" models are very nice. If possible get a "jiggler", they are practically fool-proof! Gauges show the difference in pressure between the steam inside the canner and the room air. I am at 1300 feet above sea level, the adjustment isn't much. In Denver or Flagstaff, knowing the time required for your "expected pressure" becomes more important. The boiling water isn't as hot as it would be at lower altitudes, so longer cooking times might be required for some items (typically meats). Salt (or acid) usually preserves vegetables and fruits with less cooking.

Perfect descriptions, I have water bathed before, but not pressure canned. I was always afraid, when I was little I saw a lid from one stay on but the food came volcano out. 😮

My grandmother taught me to can with her pressure canner in the late 70's. I'm not sure the brand she had (it was very old)..but my first canner was a Presto and I loved it so much! As my family grew, I graduated to the All American canner. It was quite the adjustment. This is a great beginners video. I will share with my homemaker friends. Thank you for sharing!

thank you for your video. I have this same canner but have never canned in my life and was somewhat afraid since I remember my mom saying to me (55 years ago) that pressure cookers can blow up. I selected this canner after researching the safety features but, until your video, I never felt comfortable enough to begin...thank you, again, for the step by step information.

This video is very helpful thank you! I tested my pressure canner but the pressure valve starts to turn around when the pressure is building up around 10 and it doesn’t get any higher since it’s releasing some pressure if that makes sense, I’m dutch sorry. If i put a towel on top and press the valve a little bit down it builds up pressure again. If i remove the towel to press it start twisting around again. I filmed it but I don’t know it i can show that here?

I’m happy to hear that! Do you mean flavor wise or safety? The ball canning books are a good place to start for tested recipes. I’ve been pleasantly surprised by meat. It is so tender pressure canned. Carrots do get soft and aren’t as flavorful as fresh but we still do them anyway to have them on hand for quick meals.
What's the shelf life on the jars once they're canned? Can you keep them on the pantry?
This video is so helpful! I am considering purchasing the canner provided in your link, except I prefer to use the jiggler. Before I buy this product, I want to be sure they make a jiggler for it. As such, I went on Amazon to find a jiggler for this model #01781 (23 Quart). Unfortunately, when jiggler options come up, they are being listed with 7 digit model numbers instead of the 5 digits. It's very confusing and as a result, I am not able to find the correct jiggler. Would you please be so kind as to also provide a link to the jiggler that would fit the canner provided in your link?
When would the giggler start moving if you were going to finish your process? Have you ever taken your pressure canners into the extension office to have your gage and canner checked?
This video was incredibly helpful. I do have one question… I know that if it goes below it, you have to restart the time if it goes above it I am assuming it’s fine?
Happy to hear it was helpful! Yes that’s correct. No need to reset the time if pressure goes above, just if it drops below.
Is it ok to lift the canner to another burner on the electric stove after the amount of time for canning has elapsed? Unfortunately on an electric stove the burner stays hot forva long time.
Also putting a small amount of oil does help.

Dial gauge, yes i have one but it was not assembled when opened new it did not have a nut to hold in pkace? I stuffed through middle hole, i am worried its missing nut?

Hello, best to look up the manual online as It could be different for different brands. Usually it is 3 quarts, or see if the fill line is marked on the inside of the pot.
Would I be able to use a pressure canner if I use tin cans ?
I used my new presto for the first time, but gauge didn’t work ~ I eventually just timed my beans, hope it turns out. 😢

I’m glad! Try searching your city and state elevation. It should come up. Yes - that is something I should’ve mentioned. It’s recommended to have a dial gauge canner calibrated yearly. That is a benefit to a weighted gauge canner.
You can find your altitude it on the compass section of you I phone.

can't you water bath can in a pressure canner ? wondered why folks have both...maybe because they started with water bath canning ?
So does siphoning happen right at the end if you take the lid off too soon after the pressure comes down?
Siphoning often happens when you have extreme temperature fluctuations. You want to try to avoid any sudden changes in temp. So the water of the canner and the contents in the jars you want to have be about the same temperature. At the end I like to let the jars sit for a few mins in the canner while it’s off before removing just to avoid those extreme fluctuations. Opening the lid for a few mins and then removing the lid a few minutes before the jars helps with this

Do you pressure can all types of foods? In other words, are you supposed to do certain foods in ONLY a pressure canner and other types of food ONLY in a water bath? Thank you!!!
Hello :) low acid foods are pressure canned (vegetables, meat etc) while high acid foods are water bath canned (fruits, jams, pickles). There are instructions for pressure canning some high acid foods but generally you’ll get better results water bath canning them. I personally wouldn’t pressure can something that could be water bath canned for the most part even if there are instructions for it

Is there any difference between a pressure cooker and a pressure canner? I have a presto device the same size and looks exactly the same but it was labeled as a pressure Cooker
Best to look at the model number. A pressure cooker isn’t always a pressure canner but I believe presto does have some models that are pressure cooker/canners
How much water to add to the canner? I had always added an inch over the jars. The canned says don't fill it more than 2/3 full. If I stack pints, no way could I put that much water in
It will depend on the brand/model of your pressure canner. My presto I use 3 quarts of water, then add in my jars. It would be 3 quarts regardless of whether I am doing a single layer or double layer with a canning rack between
I see you are using a glass cooktop stove. I was told not to can on them, or is that just for the big water bath canners?
Best to check the manual for your cooktop. Mine is fine to can on. I personally wouldn’t use an all American canner on it because of how heavy they are.

I'm sorry but why is it that the taste of pressure cooked/canned food terrible? Like the flavor is gone.
I don't find that to be the case or we wouldn't do it. It is a great way for us to preserve what we grow, some things flavor wise do better freezing.
