How are you able to make it so there are no ads in the video?
Is there a setting somewhere when you publish it ?

Yes, there's a setting to NOT monetize it. However, Google does what it wants from time to time if the video is popular enough for them. They'll just stick ads on it so they can make some money, which contradicts everything I'm trying to do here.
