HOW TO MAKE A DELICIOUS VEGAN PHO [with homemade broth & sweet /spicy Tofu?
The most comforting Vegan Pho (Phở Chay, Vietnamese noodle soup ) is here! The broth is flavorful, light. It’s hot, comforting and fresh, and fills the house with warming aromas of cinnamon, anise, cloves and ginger. It’s easy and fun to make, too. Recipe yields 3-4 generous bowls of soup.
Ingredients list:
pho rice noodles
for pho broth:
300g white radish
200g onion
10g ginger
3 carrot
200g corn
1 apple
100g soaked soybeans
5 shiitake mushrooms
spices:
2 star anise
1 small piece cinnamon
1/2 tsp cloves
1 tsp fennel seeds
toppings and garnishes:
spicy braised fried tofu
Lime
mung bean sprouts
Thai basil
green onion / onion
cilantro

好纯净的高汤
谢谢！！中餐常常喜欢用黄豆芽来吊高汤，在德国有时候买不到很新鲜的黄豆芽(绿豆芽到是已经慢慢普及到了各大超市),所以我尝试直接用泡好的黄豆来提味煮汤，之后煮过的豆子也可以吃掉;-))
