The wine sausage is the best sausage I ever made. I use my homemade wine. I have all my co-workers wanting me to make it for them. I also get the seal of approval from my wife’s Greek side of the family for both of these recipes.
I was served orange-flavored pork sausage on a visit to Greece decades ago, and I've been searching for it ever since. I'd begun to think I only imagined that wonderful sausage. Now I know it does exist, and even better, I can make it myself! Thanks for the recipe and demonstration.

What is the process you use to finish them before you freeze or use fresh? Do you smoke them? Do they rest in the fridge for a period of time before you use or freeze? Do you vacuum seal or can freezer bags work?
Once the sausages are finished they’re pretty much ready to go. You can smoke them if you like or just cook them as is. The sausages that are to be frozen always get vacuum sealed....

Are the casings bought or made. I never heard of them. Sorry new to this.
No sorry needed Theo. The casings are natural pork casings naught from a local butcher. Better to use real casings rather than the fake stuff. Way healthier and much better flavour....
