Healthy Vegan Date Cookies Vegan Kleecha Without White Flour, Sugar, Butter, Eggs and Milk

  • Dry ingredients
    3 cups whole wheat flour
    1 cup oat flour
    1 tablespoon instant yeast
    1 teaspoon cardamom
    1 teaspoon anise seeds
    1 teaspoon mahaleb
    1 teaspoon fennel seeds
    1 1/2 teaspoon salt
    You can add sugar and nigella seed as well, but I settled for sweet dates
    Mix all the dry ingredients and then add to them,
    1/2 cup olive oil
    1 1/4 cup warm plant milk, I used unsweetened almond milk
    Mix well then knead the dough well. The dough should be soft and somewhat sticky, so do not knead too much or add flour.
    Cover and place in a warm place to rise.
    1 package date paste about 2 cups
    Steps:
    Preheat the oven into 400 F
    -When the dough is risen, divide it into 2 parts.
    -Roll out one part of dough with a rolling pin into a thin layer.
    -Spread the date paste into a thin layer on top of the dough.
    -Roll the dough like a jelly roll. Then flatten the surface a little with a rolling pin as thin and wide as you prefer.
    -Cut into 1-inch wide, and arrange in the pan which is lined up with parchment paper.
    -Poke with a fork in a couple places.
    -Arrange on a baking pan. Brush top with a combination of almond milk and olive oil, this step is optional and bake till the Kleecha are golden brown. Mine too about 30 minutes.
