    There is something special about this... This is the exact same way I, and many other black folks season their cast iron skillets. I was taught by my mom who was raised in the deep south. Idk makes me feel like one big family :D

    This is the very first time I've seen a Hand Hammered Wok in the US. They're very easy to cook in, and keep the already cooked veggies, etc. on the sides while you cook any meat. Awesome Wok. Nice video. ty

      Her wok is most definitely not hand hammered. You can tell by the uniformity and how deep the "hammer" marks are. It's been stamped with a machine after being formed into the bowl shape. Hand hammering looks much different.

      @@turtlepowersfI thought that too. Looks too deep and way too uniformed. Hand hammered wok is more smooth than that but you can see the indents. No one wants oil sitting in the indents. I think there are only a few maybe 1 or 2 brands of hand hammered woks that’s sold in the US. Anyway that’s what I was told.

      @rosedawg7895 yup, we probably saw the same video. The 2 companies are ZhenSanHuan ($300+) and Oxenforge (~$190). I was surprised to hear that there are only 2, because I thought MasterStar was also a true hand-hammered wok, but I guess not.

    When I came to canada my whole family would sit down and watch wok with yan. A cooking show here. I learned to make food with eggs and still use the same recipe(I can’t remember the name I was like 10). We watched that show regularly. I haven’t seen another Chinese cook show as interesting as that one until now. You make it look easy and delicious.

    I never knew you had to do this! I’m an avid wok user. I use it for everything. Stir fry, eggs, boiling pasta etc. so I’m feeling pretty out of the loop

      Most pans, besides nonstick pans need to be seasoned. WOK, Cast Iron, Ceramic, Anodized.....

      @@Punterofchildren uncle roger said in a past video that a cast iron pan=wok for a white person. so if a wok is like a cast iron pan you dont clean it with soap, and she used soap on the wok. did you get a stroke from that or this part. her seasoning the wok was just burn, water soap, burn, oil, and water soap again. i seen videos of people seasoning their wok and they used, scallions, ginger and, at least a egg in it. besides the burning and oil. if you have another stroke go see a doctor.

    You need to heat the oil a lot longer than is implied in this video. Seasoning metal cookware is building a small layer of heat resistant plastic (by polymerizing the oil) in the surface of the metal. That’s why the process of prepping cast iron pans involves baking at 400 degrees for like 2 hours multiple times.

      Incorrect. A carbon steel wok doesn't require anywhere near 2 hours. You don't build up seasoning in a carbon steel wok the way you do a cast iron skillet. You don't need a bunch of layers.

      Carbon steel and cast iron are two different materials. In a steel wok the goal is not to build up thick layers of polymerized oils like in western skillets.
      You are correct that her technique is flawed, though. She did not get her wok hot enough on her initial burn. When seasoning a carbon steel wok, you should heat it to a point that you see a color shift (first blue, then black).

      @@bradbrad247 carbon steel pans and cast iron pans are breathy identical in chemical make up. You are absolutely building up a layer of polymerized oil haha. If you aren’t polymerizing the oil you’re just burning it which would then need to be cleaned off haha

      @@tainicon4639 again, you're misunderstanding the difference between seasoning the two materials. Whereas in cast iron your intention is to create thick, even layers of polymerized oil, in a wok your intention is to fill the many pores of the material.

      @@bradbrad247 both materials are traditionally polished smooth (modern cast iron is weird and not how it was historically done) and a layer of oil is polymerized on the surface to fill in variations and provide a surface that is harder to stick too.
      If I did spectroscopy on the surface of the pan or a wok it would look nearly identical. The method by which you deliver the heat to perform the reaction is different but the chemistry is the same.

    Thanjs for this video. I've been trying to decide which of the woks on Amazon to choose.
    I'm not crazy about that dimpled surface but, it looks like it will work ok..
    BTW, that's the way I do the first wash and season too... but then I season it similarly each time after I use it.
    Both cast iron and carbon steel, if heated before cooking in them, are beautifully non-stick without any chemicals!

    I first got a wok years ago and just found out recently it wasn’t an actual wok, the shape was right but the materials and texture were wrong, I was still a teen and it was a gift from my mom. Even though it was so bad the food stuck to it even on low heat with tons of oil it’s what got me into asian cuisine. Started with fried rice and stir fried noodles, two years later went to an asian restaurant for the first time and a year after that I was making my own dumplings at home (dough and everything). That wok gave out quickly but now I frequently cook asian inspired dishes and built up my spice tolerance like crazy, had to warn my parents not to taste my food because I caught my mom coughing and sweating after taking a few bites of my food in secret 😂

      I mean this is only useful if you've just got a new wok or are planning to. Woks are seasoned before the first use and from then on they'll improve with every use. My families is at least 20 years old

    Every time I see this lady’s videos I see non Asians complaining that her accent is fake but as a fellow Asian she speaks like typical Asian immigrants that migrated to the US a long time ago and have fluency in English but their accent (in her case, Chinese) is still prominent. You never lose your accent lmao. Also my friends from China who came to the US in college speak English pretty well because they learn English over there; of course their Chinese accent still shows when speaking English because that’s their native tongue. I am fluent in Viet and English but my Vietnamese accent comes out sometimes because it was my first language.
    TLDR: Non Asians who don’t know how to speak another language need to stop critiquing other people’s accents
    Also, her son doesn’t have a Chinese accent because he is BORN in AMERICA and has a white father; most likely English was his first language. 🤦🏻‍♀️

      I am a non asian but I can speak a few languages with very little accent which oddly enough gets me into trouble(strange story). Her accent is similar to the stereotypical accent played by non-asians in movies. Strange but although I've heard a few Chinese accents I haven't heard them all so I'm willing to believe hers is genuine.

      I wanted to say that her accent is genuine. It did catch me off guard kinds because it isn't shaped like Chinese accents I have heard before.

      I noticed she said in her bio that she came over in 2005 and is from Sichuan which does have their own unique dialect, it's kinda like funky accented Mandarin with its own slangs. So what hear is an American top note but base note is prolly Sichuanese Mandarin.
      The stereotypical Chinese accent that most Americans or people overseas are more accustomed with would have been a Cantonese accent because the Hong Kong film industry was glorious in the 80s and 90s with famous actors and martial artists like Bruce Lee.
      People in Hong Kong and natives from the Canton / Guangdong area speak Cantonese. It was mostly Cantonese people that left China first (aswell as Hong Kong) and established any Chinatowns around the world. Since Hong Kong and Guangdong were both large fishing ports and ports for trade I imagine it influenced them or made it easier to image the process of establishing the idea of rooting in a land else where.

      As a Chinese, I think she is doing the accent for the character just like Uncle Roger. Her grammar is too American.

      The accent fades in and out a lot. It definitely sounds like a caricature to me. The kind of accent that would be offensive if done by anyone not of Chinese or at least Asian descent and her (son?) has a very American accent. So I'm guessing it's a character.

    Well actually, there's no need to season the wok. I love how you wash it twice, that should be minimum amount you have to wash it for safety. They got smeared with industrial anti rust oil on the wok. For me, (after washing and scrub as well), i just heat the wok till it changes colour to blue-ish overall. Drop half spoon of oil (already turned off stoves) and smear it evenly with folded paper towel before keeping. If its pre cooking, i'll wash it with soap, burn dry it over stoves till it hot as can be, pour in oil (usually will produce smoke) and spread evenly before pouring the oil out into an oil pot. Then pour in new oil (needed amount) and start cooking. There's no need to season at all. By the way, love your videos. 😊

    Mix a little salt in with the oil to help it bond to the metal. You wanna repeat the sasoning / cooling cycle about 5 times to get a good non-stick surface.

    One thing she forgot to mention is after the initial heating of the pan, make sure it is cool before rinsing it again. Never rinse a hot pan with cool water! It can cause the metal of the pan to warp and become more fragile over time!
