Update: I made these for my husband and it was absolutely delicious. I served it with cornbread. The very next day I used the leftover beans put them in a tortilla added cheese, sour cream, guacamole salsa and it was delicious bean/cheese burritos. Living with my boyfriend I’ve learned so many foods sense moving to the south. Beans, smothered turkey necks, etc. I love when his dad comes to visit because I’m always learning to make the foods that were so cheap, but so delicious. Watching him make beans makes my heart warm. I just love you!! My Grandma, who is 97, does not fully remember her recipe. Breaking her heart and mine. She used ham hawks and "navy" beans?? She knows those those things but forgot most of the rest. They didnt have money, so may have had onion , but past that Im not sure. on flavoring . We ALWAYS had it with warm cornbread and butter. Love your channel!
Ham hocks will work but you got to cook the hocks until they almost done, then add the beans. Cook until done. Thanks

Oh man, We called these soup beans growing up, and sometimes it was fried chicken on Sunday and soup beans till the next Saturday where hot dogs were for dinner and fried chicken come Sunday or maybe a nice roast with good home mashed up tatters and gravy. Then it would be soup beans all over again for the five days coming. Damn, I miss my mamma and grandma's cooking. You know they said we were poor. I don't think you can be poor and have full bellies of food like this on the regular. Do you know how hard it can be to get a good pack of ham hocks nowadays? When I describe this to my friends they look at me like I'm crazy. Thank you so much, Mrs.Mattie, for showing the world what good food is.

Yes!! Ms Mattie shared two secrets to great beans. 1) Use bottled water. In my part of the world tap water not only tastes nasty it is too hard (minerals, etc) for beans. Bottled water ensures nice creamy beans. 2) If you need to add more water make sure it is boiling hot before adding it to the pot!

I love pinto beans ( we couldn't afford much more than beans when i was a child) now that i can buy what i want to eat, i still go back to pinto beans,black eyed peas, lima beans. I've learned they are full of fiber and good for you! All so i never cook with bottled water,but you gave me something to consider! Thank you😊

There are so many dishes I miss from my youth, I am 56 years old and only now learning how to cook more for myself, until COVID-19 I ate 90% of my meals out. Now I am learning to use a Ninja Foodi, a Sous Vide system, and hopefully a grill. (Bought a Kamado Joe grill 3+ years ago and not put one charcoal in it yet but I hope so soon... recovering from a total hip replacement surgery, I also need to learn to cook to lower my diabetes.

This is very similar to a recipe from my island Jersey just off the coast of France. We call it Jersey bean crock I love it.
INGREDIENTS
1 lb small white haricot beans
8 oz mixed beans (large white haricot beans, butter beans, brown and red kidney beans)
1 pig's trotter
and hock
Salt and pepper
2 oxo cubes
garlic
METHOD
Soak beans overnight in sufficient water to cover.
Drain and put in a large pot with a lid that can go in the oven and season with salt and pepper.
Cover with pig's trotter and hock garlic oxo. Pour boiling water over contents until covered. Place, without the lid, in a hot oven, gas mark 6, 200 C (400 F).
Cook uncovered until contents bubble then put on the lid, turn the oven to low, gas mark 2, 150 C (300 F).
Leave cooking all day at least 8 hours up to 12 hours, topping up with boiling water when necessary. One hour before serving, remove meat, strip the meat from the bones.
Mix into the beans, adding salt and pepper to taste.
