Soo good you painted your walls! Since almost every wall in my house has a color, I am totally against having white or almost white walls. Also, about the instruction booklets, I would suggest to just throw them away, unless you have some emotional attachment to them. Almost all of them (at least the modern lego sets) have those booklets online, so you can download the pdf. If you like the designer or background stories in them, you can also cut those out and put them in a separate binder if you want to look at them regularly.
I really do miss the building live-streams.

I live 30 min from Billund, so i go to Legoland often with my kids. The city is nothing special, but for fans from the US and such it must be cool to visit!

I hear there is a really good fan made Chopper MOC available on Rebrickable I think? Obviously you have to buy the pieces needed for it separately, but might be worth looking into as a big fan of Chopper.

A recommendation for the LEGO Manuals: We bought plastic page protectors and put them in binders, sorted by year.
Keeps them pretty well organized, and protected for the most part.
