- Uncle Tetsu was born in Japan in 1985 and became famous for selling jiggly cheesecakes with a happy little chef branded into the top. Its cheesecakes contain most of the same ingredients as a New York cheesecake - flour, eggs, cream cheese - but instead of a dense, creamy texture, Uncle Tetsu's cheesecakes are light, airy, and have a distinct jiggle.
The New York storefront that opened in the summer of 2019 is the first time Uncle Tetsu has ventured into the US East Coast. Insider stopped by the bakery to see what the international hype is all about.

Uncle Tetsu is a Taiwan owned store trying to be a fake Japanese store. The real Japanese cheesecake store is Rikuro Ojisan founded in 1957 in Osaka.

This is just a chiffon cake. I used to make them completely by hand, no mixer, for my Nana. It was her favorite.

@@rainbowllama9819 When she moved in with us we made the big room next to the kitchen her room as she could not climb stairs. The mixer noise was hard for her to listen to. She would say it was too much work by hand, but nothing was too hard to do for her. She loved lemon, then orange, chiffon cakes the best. Thank you for letting me tell my story to you. I still miss her, I always think of this when I see these cakes. Best day to you.

Japanese cheesecakes are unique not only because of its airiness and texture but also it’s barely sweet. We have Uncle Tetsu in LA (in Arcadia). The first time I had it, I thought... wow, this would be great served with something savory like a beef stew. 😂

@@FlamencoOz It's called a cheesecake as it has cream cheese in it. There's a hint of cheese in it and personally I prefer this cheesecake because it's not as dense and sweet. Different cultures have different versions of food so even though you might not like and think it's cheesecake other people might think your version of cheesecake doesn't fit their palette.

It's not dense and heavy like regular cheese cake. It's very light and fluffy. You can detect the cream cheese in it but it's also airy and a little cake like.
Some call it "Cloud Cake" - I highly recommend it 🙂🍰
