How long will they keep? Could you eat for eg 2 days later if refrigerated?
I have collected musette bags at every feed zone at every race i have been to over the last 15 years. From what i have seen the rice cakes are shunned, the "noodle" cakes are shunned, the pavo (turkey) rice ball in a meal cakes are shunned. They are always to be had in the bags as weight to sling the bag away and found littered all over the race cource after the feedzone.
What i do see on the road in the form of trash are the gels and the silver square packages filled with the above mentioned items. They do not eat those. They also seem to like nutella in one form or another. Whether that be in a brioche - with a slice of banana ( or strangely enough with peanut butter or a slice of thin ham).
Some like madeleine's.
Edvald Boasses bag ( he is a good boy ) contained hardly anything. He left me a rice cake and some unwanted hard to chew bar and some gels.
What i find interesting are the different preferences depending on what nations bag you get when it comes to the worlds. Normal europeans take the standard stuff. Gels, bars, rice cakes, coke ect. Southern europeans, e.g. the spanish and italians, seem to like some very interesting stuff indeed when it comes to flavor profile. Pina Colada gels and portugues marmalade - which ( i found out from the portugues team car members) is a form of quince reduction in the shape of a rectangle. Very nice indeed. This stuff rocks. Quinta de Coro was the brand. I am in the process of getting some from portugal. It tastes very sweet with a honey taste. Very nice. Not what us northereners see that is for sure.
The french have some weird gels. Bizarre tasting stuff in tiny squezze tubes the shape of a super glue tube with the twist top.. No wonder they left them in the bags. Yuck.
A lot of riders drinks really watery substances. A really weak ISO drink is what i could describe it as. Some drink cold thin and very weak tea of some sort. Overall the contents of their bottles were not sweet at all. Very weak mixtures.
Have yet to find any sort of muesli bar mix type stuff. Either they eat them or they are just not packed but i also check the silver wrappers that were discarded and none seem to mention anything of muesli, nutty oat type stuff.

Interesting insight! From first hand experience, I can tell you that you don't find muesli bar type of food in the bags because of the risk of aspirating it. You have to eat stuff that clumps together with a good moisture content so it doesn't go down the wrong tube. When I was younger, I brought a granola bar on the ride and damn near choked to death on one of the grains. They just take too long in the mouth crunching and chewing before you're able to swallow.

Hey Ollie, the reason they mix carbs with protein in the energy bars is also to slow the rate of stomach emptying slightly, prolonging the carbohydrate absorption and reducing lower GI distress during the long stages.

You die when you are killed. In Japan, they say that when you can't sleep at night, it's because you're awake.
Since I couldn't find where anyone else did this, here you go:
Ollie's rice cake recipe
500 grams risotto rice
250 grams cream cheese
1 tsp vanilla extract
2 tsp Ground cinnamon
3 TBSP sugar
2 TBSP of Agave nectar of honey
Wash the rice then put in a large sauce pan.
Add:
3 TBSP sugar
2 tsp cinnamon
1 tsp vanilla extract
Precisely 800 ml of water
Put the lid on.
Bring mixture to a boil then simmer for 10 min with the lid on.
Empty cooked rice mixture into a large tray lined with parchment paper.
Mix in 250grams of cream cheese and 2 TBSP of agave nectar or honey.
Evenly flatten out the mixture.
Cover and refrigerate overnight.
Lift the rice cakes out from the tray using the parchment paper and place onto a chopping board. Cut into evenly sized squares then wrap with parchment paper lined aluminum foil.
Whoa, that's alotta carbs! Michael Phelps and Shaquille O'Neal would be proud.

I enjoyed the clip today and seeing how Ollie makes the rice cakes. I have a few recipes ftom various sources, but I like Ollie's idea of the cream cheese. I might switch out for almond butter though when I make some for an upcoming overnight bike camping trip and an imminent backpacking trip. Thx for the great content.

Great video Ollie, I like your balance of accessible content but also adding a subtile scientific touch to it! Gives a bit of detail and as a scientist I find other cycling content missing the marginal gains, pushing me to a top 10% rider on strava rather than a top 12% rider! haha).

Agave syrup is essentially 100% fructose - which means it needs to be metabolized by the liver prior to being used by your muscles. Honey is only about 45% fructose, so it would be a better option for both speed of availability and liver health, since excess fructose consumption can lead to fatty liver disease.
DO the mixing in the saucepan. Make it much easier. I prefer savory rice cakes, I get enough sugar in the gels.

What drives me crazy are inconsiderate hack cyclists that throw their gel packets on the trails... freaking carb burners...
We have a well known race here and if you toss your litter on the track you are instantly disqualified.
In general out on trails if you litter and someone sees you they'll chase you down with it and stern words will be had. The way it should be.

In Hawaii they eat something called Mitsubi. It's rice with a thin bit of spam. Spam, spam, spam, spam, spam, spam.
I usually take one of those with me on a ride that is less than 50 miles. It's very savory as the spam is marinated in a sauce before it's cooked.
They have small rectangular castings that you mold the rice in, maybe smear a bit of something like flavor paste before placing the spam on top. Then you wrap the whole thing is a thin piece of seaweed.
It's also wrapped in something like your parchment foil. But it gives you, in my opinion, the right amount of calories and carbs to keep on trucking down the road.

Then line the tray with parchment paper.
Then pour out the rice etc. onto the parchment paper in the tray.
Smooth over and fridge.
Then lift the rice slab out from the tray via the parchment paper onto a chopping board, allowing you to segment the rice without destroying your knife or tray.

jules fouchĂ© in Hannahâs video she says 4 days. I made them and wrapped them and put them in the freezer. At this time of year where I am, freezing is necessary anyway because of the heat. The rice cake is well-thawed by the time I need it.

Personal experience from my second go at the 160 km around Lake Taupo: less fluids, less pee stops and started on muesli bars within the first hour, gels in the final 1-2 hours and Jelly Babies in the last 30 minutes.
I still craved a soft brown bread marmite & butter sandwich.

All the professional chef-type videos -- they have so much equipment all ready at their disposal. They have a spoon covered in honey then stick it straight in a brand new pack of flour, ruining loads of flour -- they don't care as they aren't paying for it! These are genuine do-it-yourself videos described in a way that real people _can actually do!_ Thank you!

Crazy how much different the nutrition is for different endurance racers like for cycling they tend for the sugary fast acting foods whereas racers like f1 drivers tend to not eat much sugar whatsoever and having to also take alot of fluid on board before a race as they lose like 3kg a race where with cyclists they constantly aee drinking, i mean racing drivers drink during the race too but its generally warm water and only used to keep the mouth from going dry so its very interesting to see both sides of things and how much sports can differ even when they are both endurance!
