Dear u must be using less amount of garlic. You have to use good quantity of garlic in it. Furthermore do u use stomach lining (damin) also to make it.

I believe it is good add ratanjot for instead of food colouring. I understand that cooking evolves with time and new ingredients will will,sweep into the traditional dishes. But I really appreciate you for bringing traditional wazwan dishes here. It is a great help. Will make it for sure. Wish I know someone who can throughly clean the intestine to make this dish. Mama knows how to clean it, will ask her when I go home
Raja Sekhar Vulli Thank you so much sir for your kind words. It means a lot when Kashmiris love our traditional way of showing recipies. I agree we can use other natural ingredients for colouring. Dried cockscomb flower or Mawal is also used for colouring but here I have shown the most common way in which the waza prepares it. Yes sir do make it and I can assure you that it'll taste good. As far as cleaning the intestines is concerned, the butchers themselves sell clean intestines. You just have to wash them properly, you don't have to clean them from the inside as they sell clean ones these days.
Raja Sekhar Vulli also I forgot to mention that these intestines are like a pipe. So you can wash them from the inside by placing them under the running tap. The water will itself sweep from one end to the other and they will get cleaned.
I am surely gonna try this recipe. But my only question is that i have seen other methi maaz recipes too. And they use saunf powder also. So dont we need saunf ? Will it taste good without it?
