I have only 45 years of hunting experience (on 3 continents) and 35 years of guiding in the north.
Watching this video makes me think I did everything wrong in the past. Why? Bec I did/do everything with a Swiss folder.
Remember the old saying: the larger the knife, the greater the fool!
You know truth be told, we all have our own tastes, these are my personal opinions, and options. To be fair you could sharpen a butter knife and it would likely work. To me I will say I tend to not like folders for dressing game animals as blood and other fluids can intrude into the pivot but if you can avoid that a SAK is a valiant companion
I used a Swiss Army knife to field dress deer etc. When that was all I could afford.
Now I have different knives for different hunts, usually a skinner and a boning knife. Knives, like guns are fun to collect even if not absolutely necessary!
