Would the feathers really make that much of a difference? I can see plastic fletches causing problems but feathers seem soft/flexible enough to avoid getting caught. Regardless of the bolts used, these just seem dangerous to the user

No... Slingshots decelerate. Bows accelerate. On a bow, the projectile goes faster as the bow relaxes. On a slingshot, the projectile quickly moves faster than the sling meaning the sling stops doing work as the band relaxes.

How do the feathers not get torn off?
They just bend back since fathers are not very rigid
feathers are flexible. That's
why they preferred on arrows over wooden or other less flexible stabilizing finns.
The handle has a rotation holder for the arrow when launched the rotation allows the feathers to pass though and make for a clean release
