How to Make Chocolate Mousse

So many ways to make mousse, this is my favourite
70g unsalted Butter
250g Dark Chocolate
6 egg yolks
8 egg whites
500Ml Single Cream
50g Golden Caster Sugar
T Spoon of Vanilla Extract
